Chicken Salad Cucumber Cup Bento

For tomorrow’s bento, I took an idea I saw in an appetizer cookbook and made it my own. These cucumber cups were really easy to make. I just sliced them thick enough to fit nicely heighth-wise into my bento, scooped them out with a melon baller, and filled them with a bit of chicken salad topped with parmesan cheese. Scooping the cups out was MUCH easier than I thought it would be – these would be really easy to make for a party. The chicken salad is nothing fancy, just chopped cooked chicken mixed with green onion and a tiny bit of Miracle Whip. I created a pretty flower out of the cucumber I had removed from the cups, some tomato slices, and one asparagus tip. In the other half of the box, I put some leftover cornbread, asparagus, and some Little Hearts cookies.

- cornbread

- Little Hearts cookies
- spinach leaves as box liner

you should! it takes the tedium out of packing lunches and I’ve been eating healthier too, because the prettiest colors are always fresh foods
