Chicken Tomato Omelette & Cheese Sandwich Bento

I threw this together quick for tomorrow’s lunch, not really thinking about much but what I had in the kitchen that needed to be used. I actually made twice this much and ate half for dinner, so I know it was tasty.

On the menu:

  • 2 small grilled chicken tomato omelette & Muenster cheese sandwiches
  • sauteed zucchini (i like ‘em all nice and brown)
  • grape tomatoes
  • 1/2 honey tangerine

Grilled Chicken Tomato Omelette & Cheese Sandwich

makes 4 small sandwiches


  • 3 eggs
  • 4 slices french bread
  • 1/2 cup chicken, cooked and chopped
  • 1/3 cup grape tomatoes, sliced
  • 2 slices Muenster cheese

Spray a skillet with cooking spray and place on medium heat.  Beat 3 eggs and pour into the skillet.  Sprinkle the chicken and tomato over the egg.  As it cooks, fold the egg up into thirds, the way you’d fold a business letter to make a long rectangular omelette.

Cut the omelette into 4 pieces.  Place each piece of omelette on top of a slice of bread.  Top that with half a slice of cheese, and then another piece of bread.  Repeat for all the pieces of omelette.  Swipe the pan with butter and place the sandwiches in the skillet.  When the bottom side is browned, carefully flip the sandwiches to grill the other side.  Remove the sandwiches from skillet and serve.

If you’re packing these for a lunch, you may wish to let them cool before boxing them up so they don’t steam up the box and get soggy.
