Ham, Cheese-n-Egg Cup Bento

I ran across this recipe for Ham, Cheese-n-Egg Cups the other day and thought they’d be great for lunches, so I made some tonight.  I had one for dinner, and it was really good.  The kitties had one for dinner too, because I dropped one.  They ate theirs faster than I ate mine.

These single-serve breakfast cups are made in muffin tins.  I used this recipe, but I only made 4 cups.  I used 3 eggs instead of egg substitute.  I used some sourdough bread that had gone a bit crusty for the bread in the bottom of the cups, and cheddar and jack cheese.  No need to use paper baking cups.  I did, but peeled them off after baking – I really didn’t need them and they got a bit soggy in the process.
