Italian Sausage and Tomato Mini Pizza Bento

I made it to 25! This is the 25th bento I’ve posted here. Hopefully I’ll make it to 50 :) I got the idea for these mini pizzas by watching Rachel Ray this morning. I turned on the tv to help me wake up, and there she was making party food.

She used portabellas for the crust of her pizza. They looked yum-o as Rachel likes to say, but the kid has decided lately that he doesn’t like mushrooms. I’m hoping this is just one of his “phood phases”. Because I knew there was no way he was going to even try them, I subbed English muffins for the crust.  Total time spent was less than 20 minutes.

Recipe for Sausage and Tomato Mini Pizzas

Time: about 20 minutes

Ingredients:

  • 2 English muffins
  • 1/4 – 1/2 lb Italian sausage (uncooked)
  • 1/4 cup tomato sauce
  • 1 cup grape tomatoes
  • 1/4 cup chopped green onions
  • 1/2 cup Shredded Italian cheese (mozzarella, romano, parmesan, asiago mix – or sub in your choice)
  • 2-3 fresh basil leaves, finely chopped

Toss the Italian sausage into a skillet and brown on medium-high. When it looks cooked through but isn’t yet brown, toss in the grape tomatoes. Yep, toss ‘em in whole. Add the green onions too. After a while, you’ll notice the skins of the tomatoes start to change color, and if you smoosh ‘em with your spatula they’ll split. Once your tomatoes are all split and the sausage is nice and browned, remove the skillet from the heat and set aside.

Split each English muffin into two halves. This should give you four halves total. Place these on a baking sheet. Brush each half with tomato sauce. For those interested in the Rachel Ray version with portabellos, she didn’t do the tomato sauce step (or the green onions). Top each English muffin half with 1/4 of the sausage/tomato/onion mixture. Sprinkle shredded cheese on each half. Pop these in the oven under the broiler until the cheese is all nice and brown and bubbly looking. Remove from the oven and top with the fresh basil.
