Lamb and Bruschetta Butterfly Bento

I didn’t have a plan for today’s bento other than the fact that I had bread, tomatoes, and basil that were approaching the end of their useful lives.  Then when I was at the gym, it popped into my head…bruschetta!!!I love bruschetta.  It fits into my “if I could only eat bread, tomatoes, olive oil and cheese for the rest of my life I’d be fine” theory.  Plus it would give me a chance to use my new little sauce container, the one shaped like a bear – I could fill it with balsamic vinegar!

I sliced the bread and brushed both sides with olive oil and tossed it on a baking rack in the oven for a couple minutes.  Then I rubbed each side with a clove of garlic and sprinkled on some sea salt.  While the bread was toasting I cut up some grape tomatoes, scallion, basil and garlic and put that in a little silicon baking cup, which went into the center of my box.  I put the bread on both sides and the bear shaped sauce bottle of balsamic at the top.  I had a couple green onions left so I put them on either side of the bear.  It sort of looked like a butterfly!  I made two more wings out of some lamb meatloaf I had in the freezer from last week.  I used some shredded and sliced cheese to decorate the “wings”.

It doesn’t seem like a lot of food, so I’m going to pack an apple on the side.  I’m hoping the bread won’t get soggy, but if it does I’ll just remember to pack it separate next time.

on the menu:

  • 1 mini lamb meatloaf, halved
  • 6 slices toasted garlic bread
  • 1 silicon baking cup of tomato/basil/scallion bruschetta
  • cheese, green onions, spinach leaves for garnish
  • 1 apple (not shown)
