It’s been a while since I’ve posted a bento. One reason is that bentos were taking over the site and I’ve started building a new one just for them but I’m not done yet. The other is that I’ve just been crazy busy with other things. I’ve been going to the gym every night and catching up on some books and games.

I’m finally getting a good routine going where I can fit dinner, making lunch, workout, and some family and/or me time into one night.

Tomorrow’s lunch is full of little bites. It’s actually a lot more than it looks. There’s a whole grapefruit in one half. I’ve been on a grapefruit kick lately. Grapefruit tastes like spring to me, clean and cool. I like it just the way it is, NO sugar. I like it tart :) And believe it or not, according to the package that’s a whole serving of ham, along with some cheese and crackers, some sugar snap peas, and a No Pudge Mint Brownie (fat free! 110 calories!) with a chocolate Peep bunny on top.

The No Pudge Mint Brownie mix turned out better than I thought they would. I saw them in the grocery and I was dubiously curious, and since the price wasn’t horrible I picked them up. The kiddo loves them. They have a nice minty flavor and are ooey gooey. I’m not a big fan of gooey brownies, but there are instructions on the box for more cake-like brownies so I will try that next time. The ooey gooey directions have you add 2/3 cup vanilla yogurt to the mix, and the cake-like instructions ask for 1/2 cup vanilla yogurt and 1 egg. There are also single serve instructions (brilliant!!!!) so you could make a box last a while if you have the willpower :) They also come in Original, Raspberry, and Cappuccino flavors.
